早期在阿公時代，鄉下農村人總是靠天吃飯，常常會有一年過剩，一年產量不夠之苦，因此新隆發慢慢把辛苦栽種的蔬果，經過醃製、曝曬，讓一年辛苦的收獲可以加以保存，把多餘過剩的蔬果，加工製成其他商品，讓後代子孫可以繼續生活下去，傳承源自記憶中的好味道。
