This handmade soy sauce not only carries the ancestors’ wisdom but also manifests the care and concern given to elders by the younger generation. When he was young, the father learned the skills naturally in daily life. He was familiar with the process of fermentation of soy sauce. Such childhood memory had become the foundation of the development of “You Fermented Soy Sauce” in later days. Using the selected “organic black bean with green kernels” with high nutrition values as ingredients, it is fermented in accordance with the traditional method. The ingredients are fermented in large ceramic jars for 6 to 12 months to complete the process of making this tasty and marvelous soy sauce. Inheriting the experience and wisdom from his grandmother, he has developed this soy sauce with unique taste and black bean’s aroma without using any preservative and chemicasl. A certain amount of rice wine is added to it to augment the black bean aroma when it is fermented. It is also the key to extend it shelf life.
