客家黃金塔-梅干一刀肉
肥而不膩的梅干一刀肉主要考驗著廚師刀功的表現,必須沿著豬肉外圍切開,不僅要薄且整齊,每一刀又不能斷,層層卷起形成金字寶塔狀,塔層越多越好,越能展現出精湛的刀功,完成後再將肉片放進模型裡,五花肉內塞進滿滿的梅干菜,最後推拉出金字塔造型,除了呈現傳統客家菜風味之外,更運用南投在地食材,呈現台灣最令人驚艷的味道!
Chewy and not greasy Pickled Mustard Leaf with Stewed Pork depends on the Chef’s knife skills. The exterior of the pork shall be cut into thin slices in a neat order. Layers without interruption shall be developed to form a pyramid shape. More layers present better knife skills of the Chef. Slices are then put in a mold filled with pickled mustard leaves. In addition to the presentation of traditional Hakka flavor, the use of local Nantou food ingredients brings out Taiwan’s most amazing taste.
